On Friday, 1 November, Chef Restaurateur Scott Pickett will open the doors to Pastore: an Italian-inspired all-day dining venue welcoming guests for all occasions. Located at Hotel Chadstone, Pastore — the Italian word for ‘shepherd’ — will honour the area’s heritage as a pasture and orchard.
From small plates to full tasting experiences, the menu by Pickett and Pastore Head Chef Mirco Speri (Thirty Eight Chairs) will show Italian cuisine with Australian references, with a focus on woodfire-fuelled cooking and handmade pasta.
Guests can expect dishes such as:
- House-cured duck prosciutto, Davidson plum, Geraldton wax
- Wood-roasted king prawn, fermented tomato, ‘nduja, fennel pollen
- Spaghetti ubriachi, calamari, bottarga
- Pici, sausage ragu, salted ricotta
- 35-day dry-aged Bistecca alla Fiorentina (800g)

Perfect for local families, shoppers and destination diners alike, Pastore will embrace the Italian tradition of the long lunch on Sundays, serving a generous sharing menu encouraging diners to relax into the afternoon.
Allowing guests of Hotel Chadstone Melbourne, MGallery by Sofitel to sample a taste of the restaurant within the comfort of their own rooms, ‘A Taste of Pastore’ will provide a selection of restaurant signatures from the kitchen team.
Predominantly composed of Italian varietals from local producers, the wine list by Pickett & Co Beverage Manager Clint Fox will feature a ‘by the glass’ section including premium pours, facilitated by an in-house Coravin system.
An extensive cocktail menu will see staple Italian spirits mixed with Australian botanicals, as well as signature Italian concoctions made with Australian aperitivos, such as the house Negroni of Applewood Okar Amaro, Maidenii Sweet Vermouth and Pickett & Co Gin.
Each seating 50 patrons, the dining room and adjacent bar feature a warm palette of dusty pink, brass details, natural stone, reeded glass and timber, creating a luxuriant yet comforting space that welcomes guests for all occasions.
