Offering an all day menu influenced by its namesake Spanish beachside town, Head Chef Leigh Robbins will employ the venue’s bespoke charcoal grill and cold smoker, as well as cure meat in-house, to produce the bold flavours for which the Basque region is known, and showcase produce with integrity.
- Huevos Rotos - soft eggs with ribbons of jamon, shallots and chickpea tendrils served over hand-cut fries, with harissa ketchup - will be a brunch highlight.
- Pintxos include Gildas, the classic Basque bite featuring white anchovy, green olive and guindilla pepper.
- Small plates showcase high-grade seafood - from Ceviches to Spanish Rice with Cloudy Bay clams - plus meatier staples such as Steak Tartare and boards of house-cured jamon, sobrasada and chorizo are perfect for tapas-style grazing.
- For the main affair, larger plates will be served hot off the bespoke charcoal grill, including Whole flounder with burnt anchovy butter, crispy butter beans, and Chuleton-style O’Connor’s premium pasture fed Black Angus steak - available in 700 gram or 1.2 kilogram portions.
Sebastian’s drinks list shows classic Spanish tipples alongside local and international pours, providing a beverage offering to best complement each meal. For guests wishing to stay within the region, Sebastian will serve a savvy selection of sherry, wines, vermouths, and cocktails including Sangria - available on tap, by the glass or jug.
Reimagined by leading Melbourne design firm Ewert Leaf, the heritage Art-Deco building accommodates 420 patrons across a relaxed dining room and expansive waterfront decking opening on to the sands of Williamstown Beach, with further capacity in the events space. Sebastian features a palette of white, blue and oak timber, with natural and textural materials incorporated into the design to achieve an air of casual sophistication and complement the venue’s beachside locale.
