Always considered somewhat of a sister venue to The Botanical while Paul Wilson was heading both ships, Brighton’s Half Moon pub is really quite distinct. In full view of the railway station, on a street lined with European cars, Half Moon is open, breezy and exactly the sort of sun-soaked, sophisticated pub you would expect for the seaside town. Colonial Leisure Group drafted Projects of Imagination to design the new pub, which features six drinking and dining spaces over two levels interconnected by a timber batten staircase and walkway that provides a vantage point over the entire venue. The courtyard features an air mist cooling system and landscape by Greg Palmer, the Molina room, named after the brothers who originally owned the pub, seats 20, and upstairs, the Henry Room is a cocktail style bar with DJ booth, open fireplace, and a terrace. Digital Living designed and installed the audio system, opting for a similar Martin audio and control system they created for the Botanical.

The Melbourne Pub Group knows how to do a gastro pub. Spearheaded by Julian Gerner, Melbourne Pub Group has been busying itself turning old titles into new gold, and The Albert Park Hotel is one of a long list of revitalised pubs given back their dignity as part of a stylish return to form. Others include Richmond’s Public House (sold in 2007) and the Middle Park Hotel (with the Royal Saxon Hotel another that Julian owns with Paul Olynyk). In 2006, Albert Park Hotel was one of the first Gerner cast his well-tuned eye over, calling in Six Degrees Architects to design the interior with their trademark reclaimed style. A few years on and Mark Healy and the Six Degrees team were back at Albert Park to have a fresh look at the rear of the pub.

Salvatore Malatista has owned 72 venues and he’s only 36. How’d he do it? “You start when you’re 20, you have an appetite for risk, you don’t sleep and you trust and hire really talented people. You delegate a lot and cross your fingers.” venue has previously featured St Ali’s, Malatista’s benchmark specialty coffee café. His latest acquisition is Liar Liar, a café in Hawthorn, which also fits his ‘third-wave coffee guy’ title. For those that want to be ‘in the nose’, the first wave began with the Nescafé-style industrialisation of coffee, second wavers popularised espresso coffee, with darker roasts and blends, and third wavers are all about single states and the subtle characteristics of flavour in your coffee cup.
