Pullman Melbourne Albert Park has opened its doors following a multimillion dollar renovation of its 169-guestrooms, executive lounge, meeting spaces and public areas.

The former Sebel has received the 5-Star “Pullman treatment” of its business facilities and meeting spaces. The new-look lobby features a spiral staircase and a light feature creating an impressive sense of arrival for guests complemented by a personalised check-in process.

The Pullman Executive Lounge, a hallmark of every Pullman hotel, has been designed to create a space to do business or simply relax and is available exclusively to guests staying on executive floors of the Pullman Tower. As part of the hotel’s dramatic transformation, the guest rooms have been updated with a contemporary colour palette of gold, red and chocolate.

The Vincent Hotel’s restoration is a salute to the history of this corner pub, originally established as ‘The Albert Park Windsor’ in 1889. Once famous for its vast internal garden, the hotel embodies the Victorian penchant for genteel design: a richly layered palette of patterns, tones and textures tempering classical architectural restraint.

The new interior is adorned with allusions to the fabled garden. Vast botanical motifs create cascading backdrops to the main bar and bistro, inspired by the Victorian fervour for exotic plants and flowers. The interior also features colossal murals constructed of intricately hand-cut mosaic.

Today the Sebel Albert Park Melbourne is celebrating a changing of the guard as it rebrands to Pullman Melbourne Albert Park and undergoes a multi-million dollar refurbishment. The adjoining Citigate hotel will rebrand to Mercure, the third in Melbourne CBD.

As part of the hotel’s dramatic transformation, the lobby of the Pullman and Mercure Melbourne Albert Park will be completely redesigned, as will parts of the hotel’s conference facilities, while the 169-guestrooms in the Pullman tower will receive a makeover.

Taking advantage of the hotel’s grand entrance, new reception pods will be added to the lobby, enhancing the modernised check-in experience. There will be new floors, lighting features and a spiral staircase, sofas, armchairs, tables and designer rugs.

Paul Jewson and Marco Pugnaloni have resurfaced with a brand new all-day eatery, after having wowed the crowds cramming into the all-too-small Outpost. For South Yarra locals, the tiny triangle tenancy (co-owned with Salvatore from St Ali) was the perfect introduction to Jewson’s cuisine, developed in the UK at hotspots like Terrence Conran’s Bluebird and SoHo House, and celebrated in the spate of events Paul designed for the Royal Family. Outpost was also Jewson and Pagnaloni’s introduction to the Melbourne market, its size affording them the prefect trial run before eventually and inevitably moving to a bigger venue. Fitzrovia has come to life in the shell of the Waldorf on St Kilda’s Fitzroy Street. Lately the strip, right across from Albert Park, has been experiencing a resurgence. Baker D Chirico has been a beacon for around a decade, but with Fitzrovia opening and Andrew McConnell’s Golden Fields a few doors down, the whole area is looking in prime health.

Food & Desire has been busy since Leigh Worcester and his partner took over the business in the new millennium. A change of direction led the catering company from corporate lunches to far more ambitious functions, and since then they’ve refashioned a nightclub on the rim of Albert Park Lake as the super-serene Carousel function space. This year sees Food & Desire expand again, this time into St Kilda’s Royal Melbourne Yacht Squadron, where they’ve taken on the lease of the second-storey function space, called Harbour Room (designed by Chris Connell of MAP), as well as rustling up tucker for hearty sea-faring club members.
