Developers have been eyeing-off the old Chowder Bay top-secret defence base for years. Finally, this prime piece of Sydney real estate — with expensive views of Clifton Gardens and Sydney Harbour — can be enjoyed by anyone… well, it probably helps if you’ve got some spare dosh for North Shore food prices.Renowned architect Sidney Koh has transformed the historic Submarine Miners’ Depot into a dynamic dining space that flies the Sydney alfresco dining flag with considerable aplomb. ripples at Chowder Bay, set on the outside deck of the main building seats up to 140 guests who are protected from the elements by three bronze sail structures maintaining. Indoors, AquaMine is a creature comfort lounge, bar and event space (pictured). A seven- metre-long bar with a wood panel rippled effect and marble top punctuates the space, while two private rooms (featuring oval marble tables to seat 12) are softened by opulent chandelier lighting and comfortable seating.The man behind the new development is Bill Drakopoulos. The Chowder Bay project marks his greatest challenge to date. Drakopoulos will work alongside Executive Chef, Jeff Turnbull, who will oversee the kitchen brigade at Chowder Bay, while continuing to produce an innovative fine dining menu at flagship restaurant Aqua Dining, Milsons Point.
